Week Planning
Based on the Standplaats licenses, we were able to make a weekly route. For this, we took into account that the van driver has a working week of 40 hours per week.
Besides selling products, the products also need to be picked up at the farms, which can be done by a colleague. More information about these farms will be given in a chapter below, but since these farms are closely located, we assumed that it would be feasible to reserve 8 hours per week for storing the van, which equals one full working day.
We decided to divide these 8 hours into two morning sessions: one on Monday morning, and one on Wednesday morning. In this way, you can guarantee that your products are still fresh since they only need to be preserved 2.5 days.

Where we stand and sell
When taking all the standplaatsen into account, we can come to the the following weekly overview, which is presented on the right.

The columns represent the different days of the week. As can be seen, the morning time slots of both Monday and Thursday are reserved for collecting food.
In the figure on the right, the Standplaatsen are indicated in white pointers. The pointers in grey represent additional venting spots based on the available licenses, which can be added to the route if the some of the white points are not successful.

Where do we collect products
Already in Overijssel only, there are more than 100 local farm shops that sell self made fresh food. Since we are selling in the region of Enschede/Hengelo, we looked at available local shops that are within our reach. Our goal was to try to have as much overlap as possible, by having a wide range of products. For example, more than one shop will produce cheese, simply for the reason that when one of them cannot deliver, probably others will. Therefore, you can build buffers to make sure that you can keep the same food product range per season.
From all the available local farm shops, we collected ten of them for cooperation:
Of course, this range of farms can be extended if needed, but these farms together cover the widest range of products that is most nearby.
